Visit a local market then learn to make authentic Moroccan couscous like a pro at this private Moroccan cooking class in Casablanca! It’s tradition in many Moroccan homes to serve couscous on Fridays, when families gather round a large lunchtime platter heaped high with couscous, veggies and meat. But don’t worry—you can take this class on other days during the week, too! Don’t miss your chance to make and enjoy this famous dish in the welcoming atmosphere of a Moroccan home.
You’ll begin your private Moroccan cooking class adventure in a Casablanca market to shop for fresh ingredients, and then move on to a home kitchen to chop, steam and stew your way to couscous made the traditional way. First you’ll master how to make a rich, well-seasoned broth that’s essential to a memorable couscous. Next you’ll learn how to properly handle semolina couscous by tossing it with incremental additions of water, and then how to steam it several times in a couscoussier. In between you’ll make a sweet, spicy caramelized onion garnish called tfaya, and help prepare some nem-like appetizers called briouats. When the work is done, you’ll sit down to some of the best comfort food to be found anywhere in the world. Be sure to save room for a follow up course of fresh fruit, Moroccan cookies and mint tea.
